Password protection allows users to set a write password which from the app can unlock the tag and allow you to change the data. Its not exactly easy to use and tends to be quite temperamental but its technically possible.
You can use password protection on some chips such as the NTAG213 and ICODE SLIX 2.
Another way to secure your tags are locking the tags or by using a tag management software
