Is there any way to make an NFC tag open the Spotify app on the phone and begin playing a particular song?
How complicated a process is this and do I need a specialist app to make it open up in the Spotify App and not on a website?

Yes!
If you find the song you want to share on Spotify, you can create a shareable link.
Download an NFC writing app such as Seritag Encoder, select "Write", paste this link into the "Data" box and press "Encode".
You'll be able to share any song you want and you can check what's written onto the Tag using the "Read" button from the home screen.
The link Spotify provides opens the song in the app and will prompt them to download Spotify if they don't already have it on their phone.
